Painting (watercolour). Folio 99 from an album showing Turkish costume. Usta or overseer of the cooks for the Janissaries. Wearing a brown and red (leather?) tunic, which has upturned ends, similar to a carrying yoke, on the shoulders, with eight large dishes and cooking equipment which are the emblems of his rank, hanging from, or tucked into his broad gilt belt. Wide blue trousers and high red boots. White Janissary head-dress (keçe) with a green band and an empty gold plume-holder.
