In the palace kitchen, the staff working in the section called helvahane, where halvah and desserts are cooked, syrup, jam and rose and poppy pastes are prepared, are called helvahaneli or halva makers. They wore pointed cones on their heads and wore a fez underneath. They wore dark blue salwar and red Yemeni.
